And here at Simply Fit At Home, we believe that it is time to get back to eating real food and remember that organic is always best.

It wasn’t that long ago when this advice was the farthest thing that I was doing myself. In fact, I would say my main food groups were fast-food, processed food and sugar!  So, I know what a challenge it can be to get back into the kitchen. You see my poor diet, 100 lbs overweight and all kinds of autoimmune issues, low to no energy were not giving me a quality of life I wanted.

The change came for me when I saw my mother lying on a hospital bed waiting 2 days for a hip replacement. I knew in that moment if I didn’t make some changes I was going to be her in a short period of time. This helped me to create a new vision for myself. And part of the process was taking the time to cook real food in my own kitchen most days of the week.

It was a learning process that I am totally grateful for. And it has been so worth it. I feel great today.  The real food we eat cooked in our own kitchen is amazing. Truly! My health and well-being and fitness have improved ten fold. And it is because of this I know for sure learning how to eat real food from your own kitchen can do wonders for you and your health and fitness.

This recipe features all the wonderful flavor found in traditional Buffalo wings – with none of the guilt!

As an added bonus, this satisfying one-pan meal comes together in less than 30 minutes.

Prep time: 10 minutes

Cook time: 15 minutes

Serves: 4

Buffalo Chicken Lettuce Wraps Recipe Ingredients

  • 2 T. coconut oil
  • 1 green bell pepper, finely diced
  • 2 celery stalks, diced
  • 1½ lbs. rotisserie chicken breast, shredded
  • 2 t. onion powder
  • 1 t. garlic powder
  • Salt and pepper, to taste
  • ½ c. Frank’s hot sauce
  • 2 green onions, sliced

To serve: 1 head Bibb or butter lettuce, leaves removed, washed and patted dry

Directions For Recipe

Melt the coconut oil in a large sauté pan over medium heat. Add the diced pepper and celery, and sauté until tender, around 5 minutes.
Add the chicken, onion powder, and garlic powder. Stir well and season with salt and pepper, to taste. Cook for 2-3 minutes, or until the chicken is heated through.
Add the hot sauce and sauté while stirring for another minute or two, until the sauce is heated through and everything is well coated. Remove from heat and stir in the sliced green onions.
To serve, fill Bibb lettuce cups with a few tablespoons of the chicken mixture and enjoy!
